The grapes for this wine were left on the vine for an additional 9 days after the Butcher’s Hill Riesling grapes were picked resulting in higher concentration of flavour and sugars by the evaporation of juice, whilst staying high in acids allowing a perfectly balanced wine with perceivable sugar but not too sweet.
With riper fruit the flavours are a little richer with aromas of green apple, lime sherbet, nectarine and apricot. This follows into the palate with the addition of sweet citrus blossom and lime pith with a touch of pineapple and apricot lingering. Tailing out with a rich texture over the finish. With 70 grams of residual sugar it makes for a perfect partner to pate, spicy cuisine and savoury cheeses.
